Chocolate Avocado Pudding

Chocolate pudding.

It’s creamy, chocolaty, and oh so good.

I used to eat it with Cool Whip on school nights when I was a kid.

Monday nights are reading nights in our house. And tonight we are eating chocolate pudding. So it kind of feels like I’m in seventh grade again.

As I am writing this, I’m watching my husband lick his bowl of chocolate pudding clean.

Maybe we are in seventh grade.

This pudding is worthy of a bowl licking, though. It’s that good.

And you know what? It doesn’t even have dairy or refined sugar in it!

So take out your Trapper Keepers, throw on an episode of Seventh Heaven and prepare to revisit your middle school years, because this chocolaty avocado delight will take you back to the good ol’ days.

(Ps. I pinky-swear you won’t taste the avocado. Only chocolate. Ok, I double pinky-swear.)

Chocolate Avocado Pudding

Gluten free/ Dairy free/ Vegan

Ingredients

1 ripe avocado
1/4 cup unsweetened cocoa powder
1 tsp pure vanilla extract
3 tbsp maple syrup or raw, local honey
1/4 cup coconut or almond milk (make your own coconut milk)

Directions

Put all ingredients in food processor or blender and blend until smooth and creamy.

Chill in refrigerator for at least 15 min.

Serves two.
