Even though I spend a lot time in the kitchen, I don’t always have lots of time to cook dinner for the fam.
And since they want to eat EVERY night of the week, I have to come up with some creative, fast recipes to feed them. Burger night is one of our favorite fast meals, and last night we decided to go a little south of the border with our burger night. This is what we had: Green Chili Cilantro Burgers with Spicy Avocado Sauce.
Even though I want some quick and easy recipes on hand to make for those busy times, I still am dedicated to eating, REAL, healthy, whole foods.
No processed, fast foods here. I’m all about good quality, LOCAL, pastured meats. Luckily, here in Northern California where we live, there are many ranchers to choose from. I love to dig into a grass fed beef burger any day of the week. My sweetie, on the other hand, is a bit more picky about what he eats. No beef for him. He does, however, like bison (sometimes called buffalo.) So bison is our meat of choice for burgers. Have you ever tried a bison burger? If not, you should. They are delicious. A bit leaner than beef, so you want to cook them at a lower temperature.
Unfortunately, there is no local, grass fed bison available in my area. I have been ordering it on-line in bulk. It gets shipped overnight, free shipping with a big enough order. Just got my shipment of ground bison and several bison roasts. We are set for the next few month.
So, if you are wanting a burger with a little bit of kick, go ahead and chow down on one of these little guys.
No bun necessary. Just load it up with the caramelized onions and avocado cream sauce. Add a bit of lettuce and tomato if you want. Buen Provecho!

Green Chili Cilantro Burgers with Spicy Avocado Sauce
(makes 5 burgers)
Ingredients
FOR BURGERS:
1 pound ground beef or bison (at room temperature)
1/2 of a small onion, finely chopped
1 can chopped green chilis
1/2 cup fresh cilantro leaves, chopped
1 tsp cumin powder
1/2 tsp chili powder
1 tsp celtic sea salt
FOR AVOCADO SAUCE:
1 ripe avocado, mashed
juice from 1 lime or lemon
salt
a few dashes of your favorite hot sauce
FOR CARAMELIZED ONIONS:
one large onion, sliced into thin rounds
a few pinches of celtic sea salt
2 TBS ghee or butter
OPTIONAL:
lettuce and tomato
Directions
Start your caramelized onions. Melt the ghee or butter on medium heat. Add onion rounds and saute slowly until golden brown. Push the onions around a bit to make sure they cook evenly. You can add a tablespoon of water or wine if they begin to stick to pan. Mine usually take about 25 minutes.
In a medium bowl, mix ground meat with green chilis, onion, cilantro, cumin, chili powder, and salt.
Form into 5 patties. Either grill or cook in skillet until cooked the way you like it.
Meanwhile, combine all avocado sauce ingredients and mix until creamy and smooth.
Put your burger together with lettuce, tomato, and whatever else you like. Top with caramelized onions and a dollop (or 2) of spicy avocado sauce.
Dig in and enjoy!
