
In the post for “Little Black Dress” Chocolate Cookies, I mentioned that one way to enjoy these cookies was to make them into ice cream sandwiches. After hearing how much other people loved the cookies as ice cream sandwiches, i decided that I should write a post dedicated to how to make these delicious, chocolate cookies into scrumptious homemade ice cream sandwiches. And I wanted to get this recipe to you just in time for Memorial Day weekend. Show up with these ice cream sandwiches at your holiday cookout and your dessert will be the star of the meal!
To make the ice cream sandwiches, I like to use a light vanilla ice cream. By using a light ice cream, along with the lightened up cookies, the end result is a light ice cream sandwich that is out of this world!
Homemade Ice Cream Sandwiches
1 batch of “Little Black Dress” Chocolate Cookies (makes 42 cookies)
2 1/2 c. light vanilla ice cream, softened slightly
To assemble, match up similar sized cookies in pairs. Scoop out 2 tablespoons of ice cream and place on a cookie. Then top with the other matching cookie and press together lightly. Continue to make all the remaining cookie pairs into sandwiches. Then place the ice cream sandwiches in a large pan, like a 9×13 dish, and place in the freezer to freeze for 3-4 hours. Once the sandwiches are frozen, they can be individually wrapped in plastic wrap and stored in the freezer until you are ready to eat them.
Makes 21 sandwiches.
