Well, it’s that time of the month again! It’s VEG-UCATION time!
I’m super excited once again to be joining with some blogger friends to write our monthly veg-cation through a blog circle.
This month our featured vegetable is CUCUMBER.
English author, Samuel Johnson wrote, “A cucumber should be well-sliced, dressed with pepper and vinegar, and then thrown out.”
Clearly Mr. Johnson didn’t know all the wonderful health benefits of cucumbers! Since the ancient civilizations of Egypt, Greece and Rome, cucumbers have been hailed for their ability to heal skin issues. Whether applied topically or ingested, skin has benefited from this cooling veggie. (Think: cucumber slices on your eyes) They are chalk-full of anti-inflammatory properties, antioxidants and are even being researched for anti-cancer components.
So don’t toss those cukes! Instead, make a nice cucumber lime refresher. I love to use this recipe when I’m “juicing“. Or for more ideas, head on over to Eat Your Beets to continue our blog circle. Cucumber Lime Refresher
Ingredients
3 cucumbers
2 large limes (1/4 cup juice)
1 cup filtered water
1 lime wedge for garnish
1 Tbsp. raw, local honey
Directions
Peel and dice cucumbers. In a blender, blend cucumbers with 1 cup filtered water. Pour blended mixture through a fine, mesh sieve, retaining the liquid. Slice a lime wedge for garnish, the juice two limes and add the lime juice to the cucumber juice. Stir in honey and pour over ice. The juice tastes best when chilled.
(If you have a juicer, just juice the limes and the whole cucumbers!)
