Raw Chocolate Cranberry Truffles
Vegan/Raw/Gluten free/Dairy free
Ingredients
1 cup raw cashews
1/2 cup walnuts
1/2 cup pitted Medjool dates
1/2 cup dried cranberries (make your own)
2 tbsp. unsweetened cocoa powder
pinch of sea salt
1-2 tbsp. maple syrup or raw, local honey
(unsweetened shredded coconut or cocoa powder to roll the balls in for a finished look)
Directions
In food processor, process dates, nuts and cranberries until coarse.
Add cocoa powder and salt. Proccess until all ingredients are finely chopped and blended together.
Add maple syrup gradually and continue to pulse in the processor. When the mixture starts to come together in a ball, you’ve added enough.
Use a tablespoon to form small, uniform balls. Roll each ball in shredded coconut or cocoa powder.
Store truffles in a well-sealed container in the refrigerator or freezer.
