We love smoothies. They usually grace our tummies multiple times a week. My son’s little friends even come over asking for them before they scamper away and pretend to make smoothies in Ezra’s little kitchen. They’re my go-to fast food and they make a regular appearance at breakfast. We love smoothies…can you tell?
Now, you’ll understand how heartbreaking it was when our blender shattered…to pieces. Purely by accident, we were a little too excited about smoothies one morning and Ezra dropped the blender while trying to help. (Nobody got hurt, thankfully.) The crash was devastating. Not really, but it was really hard to go without our beloved smoothies. We finally bit the bullet and got a Blendtec. It’s fun–and techy. I didn’t think it was possible, but now we love smoothies even more.
Things get whipped up so nicely, I’ve even branched out to making new drinks–like lassies. Lassies are traditionally made with yogurt, but thick, creamy coconut milk takes the reigns for this dairy-free version. The strawberries give a sweet, subtle flavor and the ice makes it the perfect summer companion.
We love drinking these on our porch, on long hot days when cooking seems outrageous and staying inside a crime.
Strawberry Coconut Lassi
Ingredients
1 1/2 cups fresh strawberries, hulled
2/3 cup ice
1 cup coconut milk (make your own HERE)
1 Tbsp. honey, preferably local, raw and unfiltered
Directions
Puree all ingredients in a blender until smooth.
Pour into two glasses and add fun straws.
