T.O.S. Cookies

TOS Cookies Recipes Redesigned

These fudgy no bake cookies are one of my childhood favorites. I don’t know what cookbook this particular recipe came from because a family friend passed it on to my mom and she made these cookies for us when I was growing up. They were the first cookie I learned how to make. Now I have the recipe and I make them for my children too. They are one of my daughter’s favorite cookies. The T.O.S. stands for “top of stove” because that is how these fudgy cookies are made. The recipe is so quick and easy to make. All it takes is a pot, a spoon and 7 simple ingredients. The end result is a delicious chocolate oatmeal cookie.

T.O.S. Cookies

1/2 c. butter (or if you use unsalted butter, add 1/4 tsp. salt)

2 c. granulated sugar

1/3 c. cocoa

1/3 c. natural peanut butter

1/3 c. unsweetened almond milk

1 tsp. vanilla extract

3 c. oats (gluten free or regular)

Combine butter, sugar, cocoa, peanut butter and milk. Heat over medium heat, stirring constantly. Bring to a rolling boil and boil gently for 1 minute, stirring the entire time. Remove from heat and stir in the vanilla. Then add the oats and stir until they are completely mixed in and coated by the chocolate sauce. Drop by rounded teaspoons onto wax paper. Cool completely; remove from the wax paper and store in an airtight container.

Makes about 3 dozen cookies.
