Watermelon Lemonade

Summertime calls for two things: watermelon and lemonade. There’s nothing better than a tall glass of lemonade on a hot day–except maybe cold slices of watermelon followed by a lazy seed spitting contest.

Well, this drink is both of those things all mixed into one!

So, the next time you are in the mood to celebrate summer, try this yummy drink!

Watermelon Lemonade

(makes a good sized pitcher full)

Ingredients

3/4 cup fresh-squeezed lemon juice (save a few slices of the lemons for garnish)
1 1/2 cups fresh watermelon puree
5-6 tablespoons simple syrup–made with sucanat (buy it here)* (see directions below)
3 cups cold, filtered water or water kefir

Directions

For the Simple Syrup
Simmer equal parts sugar and water until sugar has dissolved.

For the Lemonade
Remove fresh watermelon from the rind and puree in a blender. Pour the puree through a strainer to remove seeds. (Be sure to catch the liquid that goes through the strainer!) Pour the puree into a pitcher. Squeeze or juice the lemons and pour the juice into the strained watermelon puree. Add the simple syrup and water. Mix all the ingredients with a spoon and pour into individual glass. Garnish the glasses with a lemon wedges.

**Ps. For a fun cocktail, I bet this would be delicious with champagne in place of water or add in a little splash of vodka. Yahoo.
